Climate and mesoclimate
The average annual rainfall is 520 mm, with 320 mm occurring during the growing season. The proximity of Jastrebac Mountain creates a “rain shadow” effect — most precipitation falls on the mountain peaks, leaving the vineyards drier than surrounding areas. Thanks to the hilly terrain and excellent air drainage, the risk of frost is minimal. Fresh mountain air and summer breezes help dry the vines quickly after rain or morning dew, reducing the risk of fungal diseases.
The average annual temperature is 11.4°C, and the growing season temperature averages 17°C. The nearby mountains influence a unique temperature pattern — the vine vegetation starts 7–10 days later than in northern regions, naturally protecting against late spring frosts. Large fluctuations between day and night temperatures (15–20°C) from mid-August to late September promote gradual grape ripening, sugar accumulation, and acid preservation. Long, dry autumns allow late-ripening varieties like Prokupac and Cabernet Sauvignon to reach full phenolic and aromatic maturity.
Harvest typically begins in early September for Pinot Grigio, Tamjanika, and Chardonnay, in late September for Merlot, and mid-October for Cabernet Sauvignon and Prokupac.
